Winter Warming Vegan Stew

Moroccan veg stew 

One of my all time favourites 

One pot and super easy super tasty and bonus of hardly any washing up

This time of year can be so hard to stay motivated to do anything and we crave hibernation mode,often reaching for that quick and easy takeaway or unhealthy food fix …. this receipe is so versatile can use left overs in fridge… little prep or cooking and can be kept in fridge for couple of days …. so simple to come home and warm enabling you to beat those quick fixes,can even taken to work for lunch!

Ingredients 

1-2 teaspoon Coconut oil 

I large onion (finely chopped)

2 garlic cloves crushed 

1cm piece of grated ginger 

2 teaspoon ground cumin 

1 teaspoon ground coriander 

2 teaspoon ground cinnamon 

1 teaspoon turmeric 

1 teaspoon dried chilli flakes or fresh chillis chopped

400g of fresh tomatoes or chopped in tin don't drain if from tin 

Tomatoe purée depending on taste

2 carrots peeled and cut into cubes 

2 courgettes cut into cubes 

1 red pepper cut into bite size pieces 

300g butternut squash peeled cut into bite size pieces 

Chickpeas pre soaked or one tin drain if tinned 

225ml vegetable stock 

Salt and pepper if required 

corriander optional to throw on top

Method 

Place coconut oil in pot on medium heat 

Place onions in pot and cook for five mins 

Add the garlic, ginger, spices, chilli flakes, vegetables and stock into pan cover and simmer for 20 minutes or until vegetables are tender 

Feel free to add any other veg perfect for using up any left over veggies .....celery goes well also 

That's it guys serve with a side of your choice and enjoy ….I think quinoa or cous cous goes really well and my all time favourite side is sweet potato wedges sprinkled with paprika
